It is time to think of things green with the Irish flair. March brings Shamrocks, Irish Celebrations, Green socks, and why not Green Foods? Noticed the Happiness magazine at Walgren’s had a neat Avocado Dip recipe in one of the recent magazines but have not tried it yet. Easter is not too far behind with thoughts of bunnies and eggs.

 

Avocado-Chicken Dip

Pat Cramer Collection

1 medium avocado, chopped

1 tomato, chopped

1/4 c. medium onion, chopped

1 cup cooked chicken or one 6 3/4-oz. can drained chunk chicken

1-2 tbsp. jalapeno peppers, chopped

Stir the above ingredients together. Combine ingredients below and add to the above.

1/2 c. sour cream

1/4 c. milk

2 tbsp. mayonnaise

2 tsp. lemon juice

1/4 tsp. dried oregano, crushed

1/8 tsp. salt

Serve with favorite crackers.

 

Broccoli and Cheddar Dip

1 pkg. Lipton vegetable soup mix

1 16-oz. container sour cream

1 10-oz pkg. frozen chopped broccoli, thawed and squeezed dry

1 c. shredded cheddar cheese

In a 1 quart casserole dish, combine vegetable recipe soup mix, sour cream, broccoli and 3/4 cup cheese until smooth. Top with remaining 1/4 c. cheddar cheese. Bake at 350 degrees for 30 min. Makes about 3 cups dip.

 

Dill Dip for Vegetables

Nola’s Collection

1 c. sour cream

1 c. mayonnaise

1 tbsp. parsley flakes

1 tbsp. onion salt

1 tsp. Lawry’s seasoned salt

1 tsp. Accent

1 tsp. dill weed

1 tsp. celery salt

Combine all ingredients and mix thoroughly. Refrigerate in a covered bowl overnight in refrigerator.

 

If you are expecting a crowd it is nice to have things planned ahead and in the refrigerator for those card or cribbage game nights.

 

Green Chili Dip

3 med. tomatoes

1 can black olives

2 4-oz. cans chopped green chilies

3 tbsp. oil

4 tsp. vinegar

10-15 shakes garlic salt

Salt and pepper

Mix ingredients. Garlic, salt, and pepper to taste. Serve with tortilla chips.

 

7 layer Mexican Dip

Dip Collection

Layer on pizza pan in order given. Serve with tortilla chips

1 can refried beans

1 pkg. dry taco seasoning

1 can diced green chilies

1 carton jalapeno dip

1 tomato diced

1 pkg. shredded cheddar cheese

1 green onion, diced

1 can sliced green or black olives

 

Party Punch Collection

1 pkg. Kool-Aid (any flavor— why not green)

2 c. sugar

1 qt. ginger ale

1 6-oz. can lemonade

1 6-oz can orange juice

3 quart water

Mix well, chill and serve.

 

Café Vienna Coffee

Collection

1/2 c. instant coffee (dry)

2/3 c. sugar

2/3 c. nonfat dry milk

1/2 tsp. cinnamon

Blend all ingredients. Use 2 tsp. per 1 cup hot water which equals 35 calories per cup.

 

Breakfast Balls

Collection

1 lb. sausage

3/4 c. grated cheddar cheese

3/4 c. Bisquick

1 egg

Mix all ingredients together and shape into 1 inch balls. Place on ungreased cookie sheet. Bake 20-25 min. in 325 degree oven. Easy to make ahead as it freezes well to warm up for snacks.

 

March is usually a month of uncertainties — cold or warm — wet or dry — rain or snow — company or not — enjoy playing with the greens. Dye or frost things green to help make it through the uncertainties and enjoy life.
