August Days of Summer or some call them dog days of summer!!

This family has three wedding anniversaries and one birthday in August: H. David and Lori’s anniversary on the 7th, Harry David Jr. was born Aug. 10 of ’63, Harry and Nola’s anniversary on Aug. 14, 1960, and Robert and Amy’s on Aug. 14th as well.

 

Harry mixed up hamburger his way and we all thought it was great for the grill and/or meat loaf.

Harry’s Hamburger

Mix Up

2 lbs. ground beef

1 pkg. onion soup mix

1 pkg. ranch dressing mix

1 tsp. salt

1/4 tsp. pepper

Mix up and put in the refrigerator to marinate while waiting for the kids to show up to eat. If they come for a barbeque make into grill patties or if they are coming later in the day, mix and put in a baking pan and/or crock-pot and cook as you would for meat loaf. Serve with catsup, potatoes, and veggies. Quick and easy to grill and/or bake. It is sort of stiff and holds together nicely. Also to cook in the crock pot add 2 eggs and a can of tomato soup and turn on high for the first hour and 4 hours on low.

(Harry just buys Wal-gren’s Shurfine mixes here in Wauneta.)

 

Chicken (or Turkey) Squares

Norma’s collection

3 c. poultry meat, cooked

2 c. regular rice, cooked

1 c. fine bread crumbs, not cubes

1/4 c. onion, diced

1/2 c. celery, diced

2 tsp. salt

1/4 tsp. poultry seasoning

4 eggs, beaten

2 c. chicken broth

Combine meat, rice, bread crumbs, onion and celery. Add salt, seasoning and broth to the eggs, stir in chicken mixture and mix thoroughly. Bake in greased 9x13 inch for 55 min. in 350 degree oven. May need a bit more broth, depending on dry appearance before baking. Cover pan with foil until last 10 min.

Sauce: Use broth mixed with mushroom soup. You may add a can of mushrooms.

 

Corn & Frito Salad

2 cans yellow corn, drained

1 can white corn, drained

1 bunch onions, sliced fine

1 c. real mayonnaise

8 oz. shredded cheese

Mix all together, chill overnight.

10 oz. Chili Cheese Fritos

Before serving, crush one bag chili cheese Frito chips into the salad.

 

Peanut Butter Bars

Pre-heat oven to 350 degrees.

1/2 c. butter

1/2 c. sugar

1/2 c. brown sugar

1/2 c. creamy peanut butter

1 egg

1 tsp. vanilla

1 c. flour

1/2 c. quick cooking oats

1 tsp. soda

1 c. chocolate chips

Cream butter, sugars, and peanut butter. Add egg, vanilla and mix well. Combine flour, oats, and soda and stir into mixture. Spread into a greased 9x13” pan. Bake 350 degrees for 20-25 min.

Top with Icing of:

1/2 c. powered sugar

2 tbsp. peanut butter

2 tbsp. water

 

We got to see two of the grandchildren of oldest son David and Lori this last week before they go back to college in Laramie and Casper, Wyo. The other girl was finishing her summer job but both girls go to Laramie. Dave got rid of a few of the old dead trees on the farm so it looks a little better landscaped than it did - not so much the monster farm as it did.

Ron and Nancy were up to see Dave’s family as Ron and David worked for his Uncle Gerold and Aunt Norma Bodeman for several summers. Two of Bob’s boys got home from Black Hills Bible camp. Harry was released for light duty from his shoulder injury and it looks like maybe it is time for school to start.…

Can Halloween, Thanksgiving, and Christmas be too far away? We will be winding down 2011 soon.
