By Nola Straub A real friend is one who walks in when the rest of the world walks out. We are lucky to live in a little community that cares. My friend Jacqueline Greene shared these from one of her cookbooks. When sharing cookie recipes I like to find ones with ingredients that add to our diet more than sugar and butter fats such as flour, oatmeal, cereals, nuts, dried fruits, raisins, etc.
Family and Friends Cookies Jacqueline Greene 1/2 c. butter 1 c. brown sugar 2 eggs 2 c. whole wheat flour 2 1/2 c. oatmeal blended in blender like flour 1 tsp. baking powder 12 oz. chocolate chips 2 c. chopped walnuts 1/2 c. oleo 1 c. granulated sugar 2 tsp. vanilla 1/2 tsp. salt 1 tsp. baking soda 12 oz. Chocolate Chunks Cream butter, oleo, brown and granulated sugar, eggs and vanilla. Add sifted dry ingredients and blend well. Add chips, chunks and nuts. Drop by large teaspoons onto cookie sheet. Bake in 350 degree oven for 25 mins. Don’t let brown much.
Marshmallow Treats Jacqueline Greene 1/4 c. butter 5 c. Rice Krispies 4 c. miniature marshmallows 1 pkg. M&Ms Melt butter in 3 quart saucepan. Add marshmallows and cook over low heat, stirring until melted. Remove from heat and add Rice Krispies. Stir until coated. Press quickly into 13x9” buttered dish or pan. Quickly add a topping of candies. Cut into 2 inch squares when cool and serve. OR if you prefer: Take 1 cup semisweet chocolate morsels and 1 cup butterscotch morsels, melt in a double boiler over low heat, mix, and spread over the top of the bars. I even think peanuts and peanut butter chips would be nice to try.
Eskimo Balls No Bake Cookies Jacqueline Greene 3/4 c. butter 1 tsp. water 3 tbsp. cocoa 1 c. coconut 3/4 c. sugar 1 tsp. vanilla 1 c. oatmeal 1 c. nutmeats Combine all ingredients. Roll into balls and roll in powdered sugar. Refrigerate until serving time. This is great entertainment for children.

Quick and easy cookies are always fun when in a hurry and plus I have been looking for a way to use up corn flakes and other cereals.
Nutty Peanut Butter Flakes Nola Straub 1 1/2 c. sugar 3/4 c. dark Karo syrup 1 1/2 c. peanut butter 6 c. corn flakes 1 c. peanuts (I like the dry roasted peanuts Star snacks 16 oz. $2. jars because it doesn’t add oil) Combine sugar and syrup in saucepan. Let mixture boil up once, stiring continually. Remove from stove and add peanut butter, corn flakes and peanuts. Mix well quickly. Put into greased 9x13” pan. Press down firmly. Cut into squares at once. Serve. Amy Straub had made about the same recipe but melted milk chocolate to pour on top or try butterscotch chips.

Double Boiler Chocolate Drop Cookies 1 large pkg. chocolate chips 1 can sweetened condensed milk 1/4 c. butter Melt together in a double boiler the condensed milk, chocolate chips and butter. Remove from heat and add vanilla, flour and nuts 1 tsp. vanilla 1 c. flour 1 c. nuts Drop by spoonfuls on ungreased cookie sheet. Bake at 350 degrees for 7 minutes.
Corn Flake Macaroons Grandma Troxel (This macaroon came from a box of corn flakes and is chewy.) 2 egg whites, beaten very stiff 1 c. sugar 1 c. coconut 1 1/2 c. crushed corn flakes 1 tsp. vanilla Whip eggs very stiff. Slowly add sugar. Fold in vanilla, Coconut and crushed corn flakes. Drop on greased cookie pan by teaspoons. Bake about 20 minutes in 350 degree oven.
